Oyaku Donburi

I love Japanese food and I try to make Japanese meals as often as possible. I think like most housewives I tend to get stuck in the same meal plan. Hey, I may not like mac and cheese (okay, more like i despise it. Gross *shudder*) but it's fast, easy and pretty cheap. Somehow I tend to forget that a lot of recipes that are delicious are cheap too. Sometimes they're more work and sometimes they're even easier than filling a pot with water and dumping in macaroni noodles.

Tonight I really needed something filling and healthy and warm. I haven't been feeling 100% the last week or so and especially today I'm not very well at all.
So I pulled out my cook books and looked them over. What did I want to eat? What do I have on hand? I came across a recipe copied from a cook book from my Dad's cook book shelf that we used to eat a lot in Japan. And whatever we ate was always easy and cheap... but delicious.

Donburi meals are served in oversized rice bowls and are sometimes referred to as "savory stews on rice"

Don't forget to make your rice first and always alway always wash your rice! It really changes the outcome of your rice in both taste and texture. We use primarily Niko Niko rice and buy it in 20lb increments. We eat rice at least once a day. Japanese women say you should fill the bowl with water and always wash your rice clock wise and rinse three times. Your water for your rice should be clear on the third rinse.



Oyaku donburi: chicken and egg over rice.


4 eggs
6oz baby spinach
1/2lb (8oz) of chicken; bonned, skinned and sliced into strips
6oz sliced sweet onion
2 1/2 C. Broth (chicken OR fish)
12T soy sauce
3T sugar





Combine broth, soy sause and sugar in a small sauce pan. Bring to a gentle boil over medium heat. Add chicken, simmer uncovered for 5 minutes.




Add onion and simmer 1 minute longer. Add the Spinach and simmer for 2.5 minutes. Pour the eggs around the chicken and Cover. Let is spread naturally.



Do not let the egg cook until hardened, the heat from the rice will finish it off. Serve over rice.
